    Grilled Tuna with Smoked-Almond Romesco Sauce

    Ingredients

    1/4 cup plus 2 tablespoons smoked almonds (2 1/2 ounces)
    One 3-inch piece of baguette, cubed
    1 garlic clove
    1 cup canned diced tomatoes
    2 roasted red bell peppers from a jar, drained
    2 tablespoons sherry vinegar
    1/4 teaspoon pimentón de la Vera
    1/2 cup extra-virgin olive oil
    Kosher salt and freshly ground pepper
    Four 1-inch-thick tuna steaks

    Directions

    1.  Light a grill. In a food processor, coarsely chop the almonds, bread cubes and garlic.

    Add the tomatoes, roasted red peppers, sherry vinegar and pimentón and puree until smooth.

    With the machine on, gradually add the oil. Season with salt and pepper.

    2.  Season the tuna with salt and pepper.

    Grill over moderate heat, turning once, for 6 minutes for medium-rare, or 8 minutes for medium.

    Transfer the tuna to plates.

    Spoon some of the romesco sauce over the fish and pass the rest at the table.

    Make Ahead
    The romesco sauce can be refrigerated for up to 1 week. Bring to room temperature before serving.

    Turkey Burgers with Smoked Gouda

    Ingredients

    1 red onion, cut into 1/3-inch-thick slabs
    Vegetable oil, for brushing
    4 hamburger buns, split
    1 1/2 pound(s) ground turkey
    Salt and freshly ground pepper
    4 slice(s) of smoked Gouda cheese, 4 ounces
    3 tablespoon(s) Dijon mustard
    2 tablespoon(s) whole-grain mustard
    1 tablespoon(s) drained prepared horseradish
    1 tablespoon(s) honey

    Directions

    Light a grill or preheat a grill pan.

    Brush the onion with oil and grill until charred and softened, about 5 minutes.

    Brush the cut sides of the buns with oil and grill until toasted, about 30 seconds.

    Form the ground turkey into four 1-inch-thick patties and brush with oil.

    Season with salt and pepper and grill over high heat, turning once, until nearly cooked through, about 10 minutes.

    Top with the Gouda, close the grill, and cook until the cheese is melted and the burgers are cooked through, about 1 minute longer.

    Meanwhile, in a small bowl, combine the mustards, horseradish, and honey and spread on the bottom half of the buns.

    Top with the burgers and onions. Close the burgers and serve right away.

    Ingredients:

    • 1 beef brisket, about 8-10 pounds
    • For Rub:
    • 1/2 cup paprika
    • 1/4 cup black pepper
    • 1/4 cup brown sugar
    • 3 tablespoons salt
    • 3 tablespoons chili powder
    • 2 tablespoons garlic powder
    • 2 tablespoons onion powder
    • 1 tablespoon cayenne

    Instructions:

    Preheat smoker and add wood chips of your choice.

    Clean and dry the brisket. Combine rub ingredients and apply onto brisket.

    Place brisket in smoker for 8-10 hours. Keep the smoker temperature at about 220 degrees.

    To increase tenderness, take the brisket out of the smoker, wrap in aluminum foil and place in oven at 180-200 degrees F. for the last two hours.

    Typically after 8-10 hours a piece of meat will have absorbed as much smoke as it can and additional smoking may impart a bitter flavor.

    Take brisket off of heat and allow to sit for 20 minutes before slicing.
